1.Kneading device
The mechanical structure design follows the characteristics of "artificial imitation". In the dough mixing process, the stirring rod is structured like a finger, making a stirring action similar to that of manual labor, so that it can stir quickly and evenly, allowing the water and noodles to fully blend.
The kneading process takes 5 minutes, and each kneading dough is 15 kg. Add water twice, add water for the first time and stir for 3 minutes, let the flour combine with the solution and continue kneading to start producing gluten tissue.
After adding water for the second time, the small particles start to cohere and become larger. The stirring time at this stage is 2 minutes. In this way, damage to the dough can be avoided, and the dough can continue to achieve the best state of loose particles, consistent particle size, consistent color, full toughness, holding into a ball, and lightly kneading into granules.

In the process of making fresh noodles, waking up is a very important process. This phase is the exercise that connects gluten tissue with a strong tissue network. Too little exercise can result in imperfectly structured gluten tissue. But too many times will destroy the gluten tissue, so the noodle pressing device can form a tight network structure, making the noodles more chewy.

Rolling is to gradually roll the dough at a certain speed without destroying the gluten tissue. According to the dough state, temperature, water addition rate and other conditions, with the appropriate rolling pressure, the best rolling effect will be produced.
